These Ambrosia Macaroons are totally yummy – lots of orange flavor, and the bittersweet chocolate is just right for off-setting the sweetness of the macaroon. Oh, and easy. Did I mention the easy? They totally are.

  • 1/2 c. (1 stick) unsalted butter, at room temperature
  • 3/4 c. sugar
  • 1/8 tsp. salt
  • 2 tsp. finely grated orange peel
  • 3 large eggs
  • 24 oz. sweetened flaked coconut (about 6 c. firmly packed)
  • 6 oz. bittersweet chocolate, melted
  • Position rack in center of oven; preheat to 325 F. Line 3 large rimmed baking sheets with parchment.
  • Using electric mixer, beat butter in large bowl until smooth. Add sugar and salt; beat until blended. Beat in orange peel, then eggs, 1 at a time. Mix in coconut. Drop batter onto sheets by tablespoonfuls, spacing 1 1/2 inches apart.
  • Bake macaroons, 1 sheet at a time, until golden on bottom and browned in spots, 25 to 30 minutes. Cool completely on sheets.
  • Using fork, drizzle chocolate over macaroons. Chill on sheets until chocolate is firm, about 30 minutes.

These delicious Spinach Artichoke Puff Pastry Cups make for perfect party food; whether for a brunch, a holiday or just a get together with some friends.

  • 1 pkg puff pastry, thawed according to pkg instructions
  • 6 oz baby spinach, finely chopped
  • 1 heaping cup chopped artichoke hearts
  • 4 oz cream cheese, slightly softened
  • 8 oz 4 blend Italian shredded cheese
  • 2 eggs
  • 1 tsp salt
  • 2 tsp garlic powder
  • pepper to taste
  1. Preheat oven to 375 degrees.
  2. In a bowl mix together the cream cheese and eggs until incorporated.
  3. Stir in the chopped spinach, chopped artichoke hearts, shredded cheese, garlic powder, salt and pepper. Mix until incorporated.
  4. Lay out each sheet of puff pastry. Cut each sheet into 9 equal squares. Place the puff pastry into a muffin tin sprayed with non stick spray. {You can stretch the dough out a bit if you need to.. no worries about them being perfect}
  5. Distribute the filling evenly into each of the puff pastry cups. Bake for approx. 30-35 minutes until the dough is golden and the filling cooked through.
